1 lb crabmeat
4 eggs
2 Tbsp flour
1 cup mayonnaise
1 cup milk
8 oz shredded Cheddar cheese
8 oz shredded Swiss cheese
1 Tbsp minced onion
Old Bay seasoning, to taste
2 nine inch deep dish pie shells
_Optional:
1 Tbsp minced green pepper
2 tsp pimentos_
Combine the eggs, flour, mayonnaise and milk in a bowl and mix well.
Stir in the rest of the ingredients, being careful not to break up the crab lumps.
Bake the pie shells at 350° for 5 minutes. Cool pie shells.
Spoon crab mixture into pie shells.
Bake at 350° for 50 minutes, or until knife inserted in center comes out clean.
